Ingredients:

  • – 1 cup meal maker (soya chunks)
  • – 1 cup besan (chickpea flour)
  • – 1 onion, finely chopped
  • – 2 green chilies, finely chopped
  • – 2 tablespoons rice flour
  • – 1 teaspoon ginger-garlic paste
  • – 1 teaspoon red chili powder
  • – 1/2 teaspoon turmeric powder
  • – 1/2 teaspoon garam masala powder
  • – Salt to taste
  • – Oil for deep frying
  • – Fresh coriander leaves, chopped (for garnish)
  • – Lemon wedges (for serving)

Instructions:

  1. 1. Begin by preparing the meal maker (soya chunks). Boil water in a pot and add the meal maker to it. Let it cook for 5 minutes until the chunks become soft. Drain the water and squeeze out any excess moisture from the meal maker. Finely chop the meal maker and set it aside.
  2. 2. In a mixing bowl, combine besan (chickpea flour), rice flour, chopped onions, green chilies, ginger-garlic paste, red chili powder, turmeric powder, garam masala powder, and salt. Mix well to form a thick batter. Add a little water if needed to achieve a smooth consistency.
  3. 3. Add the chopped meal maker to the batter and mix until the chunks are well coated.
  4. 4. Heat oil in a deep frying pan or kadai over medium heat.
  5. 5. Take small portions of the meal maker batter and drop them into the hot oil, shaping them into small pakodis (fritters). Fry the pakodis in batches until they turn golden brown and crispy. Make sure to not overcrowd the pan while frying.
  6. 6. Once the pakodis are cooked, remove them from the oil using a slotted spoon and place them on a paper towel-lined plate to absorb any excess oil.
  7. 7. Repeat the frying process with the remaining batter until all the pakodis are prepared.
  8. 8. Garnish the meal maker pakodis with freshly chopped coriander leaves.
  9. 9. Serve the pakodis hot with green chutney, tamarind chutney, or ketchup. Accompany them with lemon wedges for an extra tangy flavor.

Enjoy the crispy and flavorful meal maker pakodis as a delicious snack or as a side dish with your favorite main course meal.
