Andhra-Style Gongura Mutton Curry: A Tangy and Flavorful Delight

Andhra cuisine is known for its bold flavors and distinctive taste, and one of its most popular dishes is Gongura Mutton Curry. This delectable curry combines tender mutton pieces with the tangy goodness of gongura, or sorrel leaves, resulting in a dish that is bursting with flavors. Ingredients:

  • – 500 grams mutton, cut into pieces
  • – 2 cups gongura (sorrel leaves), washed and finely chopped
  • – 2 onions, finely chopped
  • – 2 tomatoes, finely chopped
  • – 2 tablespoons ginger-garlic paste
  • – 2 green chilies, slit lengthwise
  • – 1 teaspoon red chili powder
  • – 1/2 teaspoon turmeric powder
  • – 1 teaspoon coriander powder
  • – 1/2 teaspoon cumin powder
  • – 1/2 teaspoon garam masala
  • – Salt to taste
  • – 4 tablespoons oil
  • – Fresh coriander leaves for garnish

For the spice paste:

  • – 1 tablespoon sesame seeds
  • – 1 tablespoon poppy seeds
  • – 1-inch piece of cinnamon
  • – 4-5 cloves
  • – 4-5 cardamom pods
  • – 6-7 black peppercorns

Instructions:

  1. 1.Heat oil in a large pan or pressure cooker. Add the chopped onions and sauté until they turn golden brown.
  2. 2.Add the ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
  3. 3.Add the mutton pieces and cook on medium heat until they are browned on all sides.
  4. 4.In a separate small pan, dry roast the sesame seeds, poppy seeds, cinnamon, cloves, cardamom pods, and black peppercorns until fragrant. Remove from heat and let it cool.
  5. 5.Grind the roasted spices into a fine powder using a spice grinder or mortar and pestle. Set aside.
  6. 6.Add the chopped tomatoes to the mutton and cook until they become soft and mushy.
  7. 7.Add the red chili powder, turmeric powder, coriander powder, cumin powder, and the ground spice powder. Mix well to coat the mutton with the spices.
  8. 8.Add the chopped gongura (sorrel leaves) and salt. Mix well and cook for 2-3 minutes until the leaves wilt.
  9. 9.If using a pressure cooker, add 1 cup of water, close the lid, and cook for about 4-5 whistles or until the mutton is tender. If using a regular pan, add 2 cups of water, cover, and simmer until the mutton is cooked and tender (approximately 45 minutes to 1 hour).
  10. 10.Once the mutton is cooked, open the lid and simmer the curry until it reaches the desired consistency.
  11. 11.Sprinkle garam masala and garnish with fresh coriander leaves.
