Rasam Podi Recipe: Crafting the Essence of Flavorful Rasam

Rasam, a traditional South Indian soup known for its tangy and aromatic flavors, is a comfort food loved by many. The secret to a delicious rasam lies in its spice blend called “rasam podi.” Crafting your own rasam podi at home allows you to customize the flavors to your preference. Ingredients:

  • 1 cup coriander seeds
  • 1/4 cup cumin seeds
  • 1 tablespoon black peppercorns

  • 10-12 dried red chilies (adjust based on spice preference)
  • 1/2 teaspoon fenugreek seeds
  • 1/2 teaspoon asafoetida (hing)
  • Curry leaves (a handful, fresh or dried)
  • 1 teaspoon turmeric powder

Instruction:

Step 1: Dry Roasting the Ingredients

  • – Heat a dry pan over low-medium heat. Add coriander seeds, cumin seeds, black peppercorns, toor dal, chana dal, dried red chilies, and fenugreek seeds.
  • – Roast the ingredients gently, stirring occasionally, until they release a fragrant aroma and turn slightly golden. Be cautious not to burn them, as it can affect the flavor.

Step 2: Adding Asafoetida and Curry Leaves

  • – Once roasted, remove the pan from heat. Add asafoetida (hing) and curry leaves to the mixture. The residual heat will help release their flavors.
