Ingredients:
- – 2 cups of thick buttermilk

- – 1-2 dried red chilies
- – 8-10 curry leaves
- – 1/2 teaspoon of turmeric powder
- – 1/2 teaspoon of ginger, grated
- – 1/2 teaspoon of salt (or to taste)
- – Coriander leaves for garnish
Instructions:
- 1.In a mixing bowl, whisk the buttermilk until it becomes smooth. Add water to adjust the consistency according to your preference. Set it aside.
- 2.Heat oil in a small pan over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds, fenugreek seeds, dried red chilies, and curry leaves. Sauté for a few seconds until the spices release their aroma.
- 3.Reduce the heat to low and add turmeric powder and grated ginger. Stir well for a few seconds to infuse the flavors into the oil.
- 4.Turn off the heat and allow the spice mixture to cool down for a minute or two.
- 5.Gradually pour the spice mixture into the buttermilk while continuously whisking it. This will ensure that the spices are evenly distributed.
- 6.Add salt to taste and mix well.
- 7.Pour the Majjiga Charu into a serving bowl.
- 8.Garnish with fresh coriander leaves.
- 9.Let it sit for a few minutes to allow the flavors to meld together.
